Oatmeal Cookies {Secret Ingredient—Baby Cereal}

Baby Cereal – Oatmeal

I’m a coupon girl and a sale watcher.  I stocked up on baby cereal……And I mean STOCKED UP!  All the other kids ate it, Dax was going to, too……..WRONG!!!   He HATES it!  He wants absolutely nothing to do with the stuff!  We started trying to give it to him around 7 months old.  For some reason, my coupon sale match up fun was too good to pass up and I continued buying it.  I guess I thought he would eventually eat it…….

Here we are at almost 14 months…….we have a pantry FULL of baby cereal and you know what????  He still doesn’t like it!  I can’t blame him.  If I’m going to eat oatmeal, I like it to be oatmeal….not runny mashed potatoes!

The Solution

Oatmeal Cookies

I played around with this until it was perfect (pretty close anyway).  I’m sure you could use any baby cereal, but we used oatmeal.  If you used multigrain or rice, you’d probably want to add some extra sugar for sweetness.  Or applesauce….I just thought of that….I may have to try rice cereal and applesauce….stay tuned for that one.  =)  My kids LOVE them!!!  They had no idea they were baby food cookies until after they’d eaten an entire pan!!!  They just smelled amazing and ate them up before they had even cooled!

INGREDIENTS

3/4 cup white sugar

1/4 cup firmly packed brown sugar

1/2 cup (1 stick) of butter; softened

1/2 teaspoon of vanilla (or more….I just eyeball it)

1 egg

3/4 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon cinnamon (I eyeball this one, too)

1/4 teaspoon salt

2 1/2 cups baby oatmeal cereal

1 cup of raisins (optional) or mini chocolate chips (or both)

DIRECTIONS

1. Heat oven to 375

2. Combine sugar, brown sugar, and butter; beat until light and fluffy

3. Add vanilla and the egg; blend well.

4. Add flour, baking soda, cinnamon, and salt; mix well.

5. Stir in oats and dried fruit.

6. Drop dough 2 inches apart onto cookie sheet.  I use a small ice cream scooper.  It makes prefer little balls.

7. Bake at 375 for 7-10 minutes or until edges are light golden brown. Let cook for 1 minute and remove from cookie sheet.

8. ENJOY!
